This recipe for baked crab and lemon gnocchi feels indulgent but is really quick and easy to make, making it a great option midweek
Ingredients
1 pack gnocchi, about 400g
150ml double cream
30g parmesan or grana padano, plus a little more
½ lemon, juiced
100g white crabmeat
a handful of leaves flat-leaf parsley, chopped
to serve dressed green salad
Step by step
Cook the gnocchi in boiling salted water following pack instructions, then drain well.
Heat the double cream in a pan, then stir in the parmesan and lemon juice. Let it bubble up then take off the heat, add the crab, parsley and gnocchi. Tip into a small baking dish and sprinkle over a little more cheese. Put under a hot grill for 2-3 minutes until golden and bubbling. Serve with salad.
